The truffle was already appreciated in the ancient Rome's days according to Plinio in his "Naturalis Historia". In nearest days the truffle had important extimators such as Gioacchino Rossini, That Defined it "Mozart of Mushroom" and Mata Hari, that ate it for its aphrodisiac virtues. Unlike this we prefere it more with a good dish of pasta. better if "penne", like in the following recipe, one of the most traditional recipe in Umbria.
