Umbria
and the truffle, a marriage of flavour for ages,
that intimately characterize all the regional gastronomy:
It can't be different!
The truffle was already appreciated in the ancient
Rome's days according to Plinio in his "Naturalis
Historia".
In nearest days the truffle had important extimators
such as Gioacchino Rossini, That Defined it "Mozart
of Mushroom" and Mata Hari, that ate it for its
aphrodisiac virtues. Unlike this we prefere it more
with a good dish of pasta better if "penne", like
in the following recipe, one of the most traditional
recipe in Umbria.

recipe of the month: "Penne alla Norcina" |
|
Ingredients for 4 persons:
| 500
gr of penne; a black truffle; olive oil; a clove
of garlic; some fillet of anchovy without bone;
salt and pepper. . |
Cook the penne in salt water and, in the meantime,
heat the oil with the clove of garlic. Add the anchovy
fillets and squash them till they become cream,
then remove the garlic and add the truffle.
Salt and peppery keeping on to mixing with a wood
spoon.
Drain the penne and put them in the serving dish.
Serve hot with the sauce of anchovies and truffle.
