"Me so magnete li strascicate"...who hasn't never heard these two verses with "bacete" rhyme? verses that every showman, soonerr or later, has had strike up. There are at least two versions: this one of the unforgettable theatre actor Tino Schirizi that, with his hoarse voice, had rebaptized it "o' pasta blues", and this one of Lino Banfi. "Strascinete" or "Strascinati" is the nameof a kind of typical Apulian pasta that needs to be draged on the table by fingers to get the right consistency. Then, this kind of pasta assumes a lot of names according to the latitude. In Apulia the most typical and most known example is orecchiette of esteemed brain (and Apulia is an expert of this sector thanks to its rax materials and its delicate factories); the famous "strascicate" that everyone can taste.
