The local cuisine is heavily influenced by the sea and by farming traditions. Here even the smartest restaurants tend to offer dishes derived from our grandmother's recipes. A generous portion of "Vincisgrassi" (a traditional rich lasagna of Marche), a portion of Brodetto (fish stew ), a shellfish risotto or spaghetti dressed with vongole accompanied by wines like Verdicchio, Bianchello or Rosso Corneo will satisfy even the most demanding gourmets. If you are visiting Marche in summer or spring, you'll probably have the chance of attending a local sagra - a festival dedicated to a town's particular speciality. You could taste the most important regional specialies (truffle, fish, wild boar, gnocchi, etc.) served in a dozen different ways and encircled by music and dance.
